I’ve made a lot of banana bread over the years, but this gluten free banana loaf still feels like the one I come back to again and again. It’s soft, tender, full of real banana flavor, and loaded with chocolate chips if you want to go there.

And really, why wouldn’t you?

This recipe started as an old favorite from my pre-gluten-free days, and I was honestly a little nervous the gluten-free version wouldn’t live up to the original. I worried it would be dense, gritty, or dry—the three things nobody wants from a loaf of banana bread.

Thankfully, that was not the case.

This loaf bakes up light and moist with a beautifully soft crumb, thanks to plenty of mashed bananas, sour cream, and a reliable gluten-free all-purpose flour blend. A little cinnamon and cardamom make it just interesting enough without overpowering that classic banana bread flavor.

Why You’ll Love This Gluten Free Banana loaf

This is one of those quick breads that feels like pure comfort food.

It’s made with simple ingredients, requires no complicated technique, and works just as well for breakfast as it does for an afternoon sweet treat.

The sour cream keeps the crumb moist and tender, while overripe bananas provide sweetness and loads of banana flavor. And then there are the chocolate chips, which are technically optional but very enthusiastically encouraged.

If you’ve been looking for a dependable go-to banana bread recipe, this is a great one to have in your back pocket.

The Best Bananas for Banana Bread

The secret to really delicious banana bread starts with properly ripe bananas.

You want overripe bananas that are soft and covered in brown spots. The darker and more speckled they get, the sweeter and more flavorful they become.

Those very ripe bananas are also easier to mash and incorporate into the banana bread batter.

For this recipe, you’ll need 1 cup of mashed bananas, which is about three medium bananas.

If your bananas are still mostly yellow and firm, give them a little more time. Waiting for those brown spots is one of the best ways to get maximum banana flavor without adding anything extra.

Which Gluten-Free Flour Should I Use?

For the best results, I recommend using a good quality gluten-free all-purpose flour blend.

Cup4Cup and Bob’s Red Mill 1-to-1 are both good options for this recipe. Many gluten-free purpose flour blends already contain xanthan gum, which helps provide the structure that regular flour gets from gluten.

Check your ingredient label before adding extra xanthan gum.

If your free flour mix already contains it, leave the additional xanthan gum out. Too much can make baked goods gummy.

I don’t recommend swapping in oat flour, buckwheat flour, tapioca flour, or a cup of almond flour without further recipe testing. Those flours all behave differently and can dramatically affect texture and moisture.

One of the lessons I’ve learned through years of gluten-free baking is that flour substitutions aren’t always one-for-one.

Bring Your Ingredients to Room Temperature

For the best texture, make sure your butter and eggs are at room temperature before you begin.

Softened butter creams more easily with the sugar, which helps create a lighter, more fluffy texture.

Room-temperature eggs also mix more smoothly into the batter.

It’s a small thing, but it can make a noticeable difference in how evenly your loaf bakes and rises.

How to Make Gluten-Free Chocolate Chip Banana loaf

  • Start by preheating your oven to 350°F and greasing a standard loaf pan. You can also line the pan with parchment paper to make removing the finished loaf easier.
  • In a large bowl or large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
  • Add the large eggs and vanilla extract, then beat until smooth.
  • In a separate bowl, whisk together the dry ingredients: gluten-free all-purpose flour, baking soda, salt, xanthan gum if needed, cardamom, and cinnamon.
  • You can add the dry ingredients directly to the butter mixture as the original recipe does, but whisking them separately first helps make sure the leavening and spices are evenly distributed.
  • Next, stir in the mashed bananas and sour cream. These are the real moisture-makers in this recipe.
  • Once the wet ingredients and dry ingredients are combined, fold in the chocolate chips.
  • Pour the batter into your prepared loaf pan and smooth the top.

How Long Should Banana Bread Bake?

  • The bake time is about 1 hour and 15 minutes, though ovens vary.
  • The loaf should rise nicely and turn golden on top.
  • To test for doneness, insert a toothpick into the center of the loaf. It should come out clean or with just a few moist crumbs attached.
  • If the top is getting too dark before the center is done, loosely tent it with aluminum foil and continue baking.
  • Once baked, let the bread cool in the pan for about five minutes, then transfer it to a wire rack to cool completely.

I know. Waiting is difficult. My kids have absolutely convinced me to slice into this loaf while it was still steaming.

Can I Use Something Besides Butter?

The recipe was developed with softened butter, which gives the loaf its rich flavor and tender crumb.

If you need a dairy-free version, vegan butter may work well in place of regular butter, especially if you also use a dairy-free yogurt in place of the sour cream.

You may also be tempted to use olive oil, coconut oil, avocado oil, vegetable oil, or canola oil. Those substitutions can work in some banana bread recipes, but they will change the texture and flavor, so I prefer the original butter version for this particular loaf.

Likewise, I haven’t tested this recipe using flax eggs, so I can’t promise the same results if you replace the eggs.

Can I Use Brown Sugar or Maple Syrup?

This recipe uses granulated white sugar, which keeps the crumb light and lets the banana flavor shine.

You could experiment with brown sugar, coconut sugar, or maple syrup, but each will affect the moisture and texture differently.

If it’s your first time making the recipe, I’d stick with the original formula before experimenting with substitutions.

Do I Have to Add Chocolate Chips?

No.

But also… chocolate chips.

You can use anywhere from ½ to 1 cup depending on how chocolate-forward you want your loaf to be.

Mini chocolate chips distribute particularly well throughout the batter, but regular chocolate chips work too.

If chocolate isn’t your thing, chopped walnuts or pecans are lovely alternatives. Or leave the loaf plain for a more classic banana bread experience.

Can I Make Muffins or Mini Loaves?

Yes.

This recipe adapts beautifully to muffins, and readers have also had success baking it in mini loaf pans.

Just remember that smaller portions will need a shorter bake time than a whole loaf.

Start checking early and use the toothpick test rather than relying only on the clock.

How to Store this Gluten Free Banana Loaf

  • Let the loaf cool completely before storing.
  • Wrap it tightly in plastic wrap or place it in an airtight container at room temperature for a day or two.
  • For longer storage, I prefer freezing because refrigeration can dry out gluten-free baked goods.
  • You can freeze the whole loaf or individual slices. Wrap them well in plastic wrap, then place them in freezer bags.
  • A frozen slice thaws surprisingly quickly and is especially good warmed for a few seconds.

This simple loaf has been part of my recipe collection for years for good reason. It’s tender, deeply banana-y, easy to make, and dotted with chocolate chips in all the right places.

  • Preheat the oven to 350 degrees and grease a standard loaf pan.

      I haven’t tried it myself, however I found a conversion chart and they suggest swapping the 1/2 cup of butter for 1/4 cup + 2 tablespoons of olive oil. Please let me know if you try it, and how it turns out! 🙂

    1. Kelly, I feel I the same about baking! And after successfully making a zucchini bread from Allison’s recipe I too wanted to try the banana bread– my favorite. It’s in the oven now. I am pretty sure it will taste awesome. I substituted the last 1/2 cup flour for coconut flour/almond meal mixed together bcs I ran out of regular GF flour, and I also substituted the sour cream for vanilla Chobani. I decided to bake it in those little bread tins, and I’m thinking about 45-50 min should do it. I will let you know how it tastes.

    Fantastic recipe. Our new favourite. I always double the recipe and noticed that the conversion tool doesn’t change the number of bananas, just the cups. Just thought I’d point that out in case others don’t measure their bananas… Like me!

    Thank you for this gem. I have tried many recipes and different flours and just can’t get it like my moms gluten full banana recipe that we all love. Until now. I made as written (just no cardamom) and it was delish. My moms didn’t have sour cream but I was desperate as epicures mix is on back order ( still not my moms!) so I gave this a go. Making for second day in a row now. Thank you for saving me. I used the recommended flour which I think,when baking gluten free changing flours doesn’t result in reliable outcomes. Just for anyone who has a different flour on hand.

  12. grams helps for baking as each Gf flour weighs out differently ..I don’t guess anymore.. plus I let the batter sit for about 20 minutes before baking..

  13. Just made this as muffins and replaced the banana with the leftover pumpkin butter from your pumpkin pie recipe. Turned out great! I did a straight replace (1 cup of pumpkin butter rib place of banana). Next time I’ll add raisins and walnuts to it. New Thanksgiving tradition for us since I always have pumpkin butter leftover after the pies.
