Gluten-Free Pumpkin Oatmeal Cookies with Dark Chocolate

Alison Needham

These gluten-free pumpkin oatmeal cookies are soft, warmly spiced, and loaded with rich dark chocolate chunks. Hearty oats add texture, while pumpkin keeps them wonderfully tender. Finished with a sprinkle of flaky sea salt, they're the perfect balance of sweet, salty, and cozy fall flavors. Easy to make and even easier to eat! Makes about 2 dozen small cookies.

Instructions

  • Preheat oven to 350°F. Line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the gluten-free flour, baking soda, spices, and xanthan gum if needed.
  • In a large mixing bowl, cream the butter and sugars until combined. Add pumpkin, egg, and vanilla and mix until smooth.
  • Stir in the dry ingredients until fully incorporated. Fold in oats and dark chocolate chunks.
  • Using a tablespoon-sized cookie scoop, portion dough onto prepared baking sheets, leaving two inches between cookies. Press a few extra chocolate chunks on top, if desired, and sprinkle lightly with flaky sea salt.
  • Bake for 15–18 minutes, until puffed and lightly golden brown. Cool on the baking sheets for a few minutes, then transfer to a wire rack.
