Lime in Da Coconut: Tropical Lime and Coconut Cocktail
There are cocktails that politely suggest you relax, and then there are cocktails that make you crank up Harry Nilsson, pull your best friend into the kitchen, and start dancing around the island like you’ve wandered straight into the midnight margaritas scene from Practical Magic.
This lime in da coconut cocktail is very much the latter.

It’s cold, creamy, tart, tropical, and just boozy enough to make Friday night feel like an occasion. Fresh lime juice keeps all that lush coconut from becoming too sweet, vanilla rum adds a warm little something, and an entire piece of lime—rind and all—gets tossed into the blender for an extra punch of citrus.
Basically, you put the lime in the coconut. You drink ’em both up. And if Aunt Jet and Aunt Frances suddenly appear in your kitchen, I’m certainly not going to complain.
This recipe originally came to me from my friends Pete and Kelli Bronski of No Gluten, No Problem, who created it after falling hard for a tropical drink they sampled while vacationing in St. Croix. Their version has been living here on the blog for years, and frankly, it deserves another spin around the dance floor.
Why You’ll Love This Lime in Da Coconut Cocktail
Somewhere between a frozen coconut cocktail and a very tropical cousin of a margarita, this drink hits all the right notes.
It’s creamy without being heavy, thanks to cream of coconut; bright and tart from plenty of fresh lime juice; and icy enough to be wildly refreshing on a hot California afternoon. Vanilla-flavored coconut rum would be delicious here, but the original calls for vanilla rum, which gives the drink a softer, warmer flavor without piling on even more coconut.
And it takes about five minutes to make.
Which leaves plenty of time for midnight margarita-style kitchen dancing.
Cream of Coconut vs. Coconut Cream
This is one of those slightly annoying coconut aisle situations, so here’s the important bit: cream of coconut and coconut cream are not the same thing.
For this recipe, you want sweetened cream of coconut, such as Coco Lopez. It’s thick, rich, and already sweetened, which gives this frozen cocktail its silky texture and tropical sweetness.
Canned coconut cream is usually unsweetened, while coconut milk is thinner still. Neither is a direct swap for cream of coconut unless you’re prepared to adjust the sweetener.
If you want a lighter coconut drink, you could experiment with a splash of coconut milk or coconut water, but the original cream of coconut is what gives this particular cocktail its dreamy, almost dessert-like texture.

A Little Practical Magic
I cannot make a lime-and-coconut cocktail without thinking of Practical Magic.
You know the scene.
The blender comes out. The Owens women make midnight margaritas. Harry Nilsson’s “Coconut” starts playing. Suddenly everyone is dancing around the kitchen and all sensible plans for the evening have disappeared.
It is one of cinema’s great arguments for owning a blender.
And yes, Harry Nilsson’s “Coconut” really is the song playing during that beloved midnight margaritas scene.
So while this isn’t the actual margarita from the movie—there’s rum rather than tequila involved—the spirit feels exactly right. Make a batch for a Practical Magic movie night, a girls’ weekend, or one of those evenings when you and your best friend decide the kitchen needs a dance party.
No spell casting required. Probably.

Alison’s Tips
Yes, the whole lime goes into the blender. That little ¼ lime includes the peel, which gives the cocktail an especially bright, slightly bitter citrus edge. If your blender isn’t especially powerful, chop it into a few smaller pieces first. The original recipe uses this same whole-lime trick.
Use cream of coconut, not plain coconut cream. Coco Lopez is the classic choice and gives the drink both sweetness and body.
Taste before adding more sweetener. Cream of coconut is already quite sweet. The agave adds another touch of sweetness, but especially juicy limes can vary a lot in tartness.
Want more rum flavor? You can replace some or all of the vanilla rum with white rum. A coconut rum works too if you want to lean all the way into tropical territory.
Want it lighter? Replace a small portion of the cream of coconut with coconut milk or coconut water. The drink won’t be quite as creamy, but it’ll still be wonderfully refreshing.
Can I Make This Coconut Cocktail Ahead?
Not really—and that’s okay.
Like most frozen cocktails, this one is happiest straight out of the blender. You can squeeze the lime juice and measure the rum and cream of coconut ahead of time, then stash everything in the refrigerator.
When cocktail hour arrives, pour the rums and the rest of your ingredients into the blender with the ice and blitz away.
The entire operation takes about five minutes, which is approximately the amount of time I’m willing to wait for a tropical drink.
What Does a Lime and Coconut Cocktail Taste Like?
Imagine fresh Key-lime-ish brightness meeting creamy coconut with a little vanilla and rum underneath it all.
The fresh lime juice prevents the sweet cream of coconut from taking over, so although the drink is rich and creamy, it still tastes lively and refreshing. The tiny bits of shredded coconut add a little texture, while blending in part of the lime gives it a more complex citrus flavor than juice alone.
It’s tropical without tasting like sunscreen.
Always a plus.
What to Serve With It
This is a natural warm-weather cocktail, so I love it with anything smoky, salty, spicy, or straight off the grill. The original recipe was suggested alongside pineapple-guava BBQ pork ribs, which sounds pretty spectacular.
It would also be lovely with carnitas, grilled shrimp, fish tacos, chips and salsa, or anything else you’d happily eat barefoot on a patio.
And if dinner happens to be popcorn during a Practical Magic rewatch?
I fully support that choice too.

So Put the Lime in Da Coconut…
There’s something wonderfully unserious about this drink. Maybe it’s the frothy coconut. Maybe it’s the rum. Maybe it’s physically impossible to say lime in da coconut without hearing Harry Nilsson in your head.
Whatever the reason, this is the kind of refreshing cocktail I want in my blender when the weather is warm, the week has been long, and the kitchen could use a little magic.

Equipment
- Blender
Ingredients
- 4 shots Cruzan vanilla rum
- 4 shots cream of coconut sweetened coconut cream, such as Coco Lopez
- 1 shot agave nectar
- ½ cup fresh lime juice about 2 to 3 limes
- ¼ fresh lime
- 1 tbsp finely shredded unsweetened, dehydrated coconut (such as Let’s Do…Organic)
- 2 large cups ice 500g by weight
- Lime wedges for garnish
Instructions
- Add all ingredients to a blender and blend until smooth. Garnish glasses with wedges of lime.
